Our wines are first and foremost authentic and characteristic wines of this region. They possess a clear and complex aroma. Their density and texture is the result of old vines with small output, not of excessive extraction and residual sugar. They therefore do not seem opulent and broad, but compact and long. The round tannin provides the wines with structure and length, without covering their elegance and finesse. They are harmonic wines which regardless of their power have kept a certain airiness.

We do not perform “Winemaking”. Our wines are the exact result of what the vineyards create due to our work during the year. We try to intervene very little with the natural process and give them time to find harmony and balance. 

The red wine grapes are twice sorted by hand. Before they are destemmed we check their general status, their health and ripeness. After the process the dry berries and the remaining stems are sorted out. The aim of this extensive way of work is for the wine to only contain healthy and ripe grapes. Therefore generally producing wines with ripe tannins and clear aroma characteristics.  The juice normally ferments inside small concrete tanks, but some portions also go through this process in open 600 liter barrels. After the alcoholic fermentation the wine is carefully pressed with our basket press, and then transferred into barrels of different sizes where the malolactic fermentation will take place in the spring of the following year.  All red wine is filled into bottles without fining or filtration.
