Le nom de vin 'Tabula Rasa' signifie 'Feuille blanche'. Selon le philosophe anglais John Locke cette expression désigne l'immaculée conception. Dans le langage familier, 'Tabula rasa' est également synonyme de l'expression 'reinen Tisch machen'. Les deux expressions signifient 'faire table rase de' et marquent une rupture avec le passé. L'inscription figurant sur l'étiquette est un extrait de l'original, qui retrace trois siècles d'anciens essais de John Locke sur la raison humaine, et mis à disposition par la bibliothèque du couvent de Einsiedeln. 

Le vin blanc provient des cépages Grenache gris, Grenache blanc, Carignan blanc et Macabeu. On les trouve dans les vieilles vignes majoritairement rouges et nous les sélectionnons en fonction de leur maturité. Les raisins sont foulés au pieds et après pressés à l'aide d'un pressoir. Après une sédimentation naturelle, le moût est transvidé dans des tonneaux de 400 litres, dans lesquels il va fermenter. Le vin est élevé 12 mois sur les lies fines avant d'être embouteillé.

"The 2013 Tabula Rasa is a blend of Grenache Gris, Grenache Blanc, Macabeu and Carignan Blanc that was brought up all in older barrels.  Slightly deeper in color than the 2012, it offers classic notes of dried pineapple, honeysuckle, crushed rocks and toast.  this is followed by a medium-bodied, full, fleshy and textured white that will do well at the dinner table."
